Lemon Buddies

I've loved puppy chow since... since... forever.  And when I looked on the back of the Rice Chex box to make some, lo and behold, there was the recipe for Lemon Buddies.  However, since that one calls for vanilla baking chips and they don't sell those anywhere near me, I used The Domestic Rebel's recipe, which uses white chocolate (yum) instead.

Lemon Buddies
9 cups Rice Chex cereal
1 1/4 cups white chocolate chips
1/2 stick butter
zest of 1 lemon
4 tablespoons lemon juice
3 cups powdered sugar

  1. Measure cereal into large bowl.  Set aside.
  2. Melt white chocolate chips, butter, zest, and lemon juice in a microwave-safe bowl for one minute.  Stir, then microwave for another 30-45 seconds.  Stir until smooth.
  3. Pour over cereal, stir gently to coat.
  4. Pour cereal into 2-gallon Ziploc bag (or pour half into a 1-gallon bag and reuse, halving the following directions) and add 2 cups powdered sugar.  Toss gently to coat; add remaining cup and shake well.
  5. Spread mixture over wax paper and let dry for 30 minutes.  Store in an airtight container.

Breaking it down:
Measure 9 cups cereal.
Microwave white chocolate chips, butter, zest, and lemon juice...
...and stir until smooth.
 Pour over cereal and stir gently...
Pour into a plastic bag...
...add powdered sugar...
...and shake well.  Spread over wax paper and let harden.  Then enjoy!
Don't forget to store in an airtight container - otherwise it gets really chewy and soggy, really fast!  Enjoy!
